Our Pancake Sprinkle mix is made from the perfect combination of Ceylon Cinnamon Powder and Coconut Sugar.
Ceylon Cinnamon is referred to as “true” cinnamon because that is exactly what it is, the bark of a cinnamon tree. This cinnamon comes from the more mature trunk of the tree while the non-organic Ceylon cinnamon comes from the quills. The higher oil content from the trunk bark leads to a more potent, spicier, longer lasting flavour than the non-organic Ceylon, although it still has that wonderful hint of citrus.
Coconut Sugar is regarded as a better alternative to refined sugar, it is made from the dehydrated and boiled sap of the coconut palm. Another distinguishing fact is that most sweeteners are refined and / or chemically altered, whereas coconut sugar is not refined or chemically altered.
HOMEMADE PANCAKES:
50g self-raising flour
50g wholemeal or wholegrain flour
2 small eggs, separated
150ml skimmed milk
RECIPE:
1. Sift the flours into a bowl or wide jug and tip any bits in the sieve back into the bowl. Add the egg yolks and a splash of milk then stir to a thick paste. Add the remaining milk a little at a time so you do not make lumps in the batter.
2. Whisk the egg whites until they stand up in stiff peaks, then fold them carefully into the batter.3. Heat a non-stick pan over a medium heat. Cook for just under a minute until bubbles begin to pop on the surface and the edges are looking a little dry. Carefully turn the pancake over.
Keep warm while you make the remaining pancakes.
